Two days in a row at the gym
I really feel like I am FINALLY back on the track I was on earlier this year. I never really got off the track, just took a different route. However, I'm now back on the main path and headed toward my goal. No detours, no stops.
That's a bit cheesy, isn't it? Yeah, I think so too.
I've scaled back with the trainer at the gym. No, I'm not quitting him, just switching to one day a week for a while. I have a list of all the things I'm supposed to do on the days we don't work out. The ab workout is all the ones I hate the most. BUT, I'll do them. I won't like it, but I'll do them.
I'm still under my calories -- I should be having a minimum of 1,350. Today, I hit 1,127. I find it hard to eat all my calories, and eat healthy because then I feel like I'm pigging out. Although, when you think about how I used to eat 2,000 calories in one meal (thanks fast food joints), it doesn't seem so hard.
How do you get all your calories in for the day? What tricks do you have?

Meatloaf, Smeatloaf, double beatloaf... I hate meatloaf
OK, not really, but if you can name the movie that line comes from, then you get a gold star.
So, I had an interesting day, today. I arrived at the office and was going about my business when all of a sudden, the power went off. The generators came on immediately, but they only give power to the emergency lights. No computers, no phone, nothing. I guess I should tell you all there is a giant storm going on. I woke up at 3am to the sound of wind and rain outside. It literally did not stop raining until about 7pm, tonight. The wind was terrible, and it knocked the power out to my building, city hall, and a couple other downtown buildings.
No sooner had the word come down from the bossman that we could leave, the power came back. A bunch of people had already left, so my immediate boss said I could go. Now what was I supposed to do?
I got home (having to take another route home since there was flooding on the main route), changed and decided to go to the gym. Yes, the gym. Apparently, I have turned into one of those people that actually likes going to the gym. I walked two miles on the treadmill, then headed home. I decided to take advantage of the time I had, so I hit Safeway and got the fixin's for a meatloaf.
You all know I'm not a "take a picture as I go" person, so here's the recipe...
Two pounds ground turkey (or beef if you so desire)
Two eggs, lightly beaten
1/4 cup bread crumbs (I used Progresso original flavor)
Whichever spices you like (I used onion powder, garlic, thyme, salt and white pepper) - to taste
Mix all ingredients in a bowl and mold into a loaf, or use a loaf pan. I used a silicone loaf pan. Bake at 375 degrees for about an hour or until cooked through. If you're the ketchup type, you can spread ketchup over the top before you put it in the oven. I personally like to dip, so I left it off. You can also use barbeque sauce, tomato sauce or really any other sauce.

While I waited for the meatloaf to cook, I got to mixing the ingredients for an apple cake. I was given a mix to try so, I grabbed an apple, beat two eggs, and mixed it all together. It smelled divine.
Once the meatloaf was finished, I served Scotty a slice along with some mixed veggies. Then I remembered to take a picture of the completed loaf.

With the meatloaf out of the oven, I put in the cake. 45 minutes later... VIOLA!

It was like I was channeling Martha Stewart, today. Good thing I love her!
On another note, I'll be attending the Foodbuzz conference being held in San Francisco in early November. It was a last-minute decision. I'm really looking forward to spending the weekend in my favorite city and eating, drinking and meeting other Foodbuzz bloggers!
